Basel Flour Soup (Mehlsuppe)

Description

Basel Flour Soup is a simple soup made from roasted flour, broth or water, onions, butter and cheese. This dish is associated with the Basel Carnival (Basler Fasnacht).

Ingredients

For 2 servings
500 ml light broth
80-100 ml white wine
25 g flour
25 g butter
1 medium onion
Cheese (eg, Emental)
Salt

Instructions

Fry the flour until brown. Finely chop the onion. Melt the butter; gradually pour the flour, stirring constantly. Add the onion and simmer for 5 minutes. Pour the broth and wine, bring to a boil and cook on a low heat for 30-35 minutes. Salt to taste. To serve, sprinkle with some grated cheese.
