Batter Fried Cod

Description

Fresh cod fillets fried in a simple seasoned batter.

Ingredients

300 g cod fillets
50 g flour
70 ml cold water
Fresh thyme, a few sprigs
Ground black pepper
Sea ​​salt
Extra virgin olive oil

Instructions

Separate the thyme leaves from the sprigs. In a small bowl mix the flour, salt, pepper and thyme leaves. Gradually pour in the water, stirring constantly. In a frying pan heat the oil (about 200 ml). Dip the fish in the batter, put into the pan and fry until golden brown for about 7-10 minutes on each side.

Cod under Marinade

Description

Fried cod under a juicy carrot tomato marinade.

 Ingredients

0,5 kg cod fillets
5 carrots
1 can chopped tomato (250 g)
1 medium onion
1 tsp. tomato paste
2 bay leafs
2 cloves
Salt
Black pepper

Instructions

Cut the cod fillets into small pieces, season with salt and pepper, coat in flour and fry in a frying pan in some olive oil until cooked. Put the fish into a flat serving dish in one layer.
Grate the carrots. Cut the onion into thin semi circle slices. In a frying pan heat two tablespoons of olive oil and fry the onion until lightly brown. Add the carrots and fry another 5 minutes. Add the tomatoes, cover and simmer for 15 minutes. Add the tomato paste, cloves, bay leafs and salt for 5 minutes before cooked. Spread the marinade over the fish and smooth. Allow to cool and put into the fridge. Serve cold, for instance with mashed potatoes.

Fried Sardines

Description

Fried sardines with lemon wedges and asparagus - simply perfect supper.

Ingredients

8 fresh sardines
Extra-virgin olive oil
Sea salt
1-2 lemons

Instructions

In a frying pan heat the oil. Rub the sardines with salt and place them into the pan. Fry for 3-4 minutes on each side until golden brown. Transfer on paper towels to remove excess oil. Then put on a serving dish. Serve with lemon wedges and boiled asparagus.

Roasted Trout with Fennel

Description

Whole fresh trouts roasted with fennel, onion, lemon and white wine.

Ingredients

For 2 servings
2 fresh trouts
2-3 fennel bulbs
1 medium onion
A few slices of lemon
150 ml white wine
Olive oil
Salt

Instructions

Grease a baking dish with a little olive oil. Slice the fennel and onion finely. Put into the form, sprinkle with the oil, salt and mix well. Place in a preheated to 200C oven and bake for 15 minutes. Rub the fish with a little salt, score on both sides and fill with the lemon. Pour the wine over the fennel, put the fish onto the top and bake another 25-30 minutes. To serve, sprinkle with finely chopped herbs (fennel or dill).

Salmon with Lemon and Thyme

Description

Super healthy baked salmon with lemon and fresh thyme.

Ingredients

For 2 servings
250 g salmon fillets
2 lemon slices
4 springs fresh thyme
Extra virgin olive oil
Salt

Instructions

Salt the salmon and brush with some olive oil. Put the fish into a baking bag. Put the lemon and thyme atop. Bake at 170C about 15 minutes. Serve with boiled rice or asparagus.

Salmon with Soya Sauce

Description

Fresh salmon fillet baked in microwave oven with soya sauce, coriander and ginger.

Ingredients

250 g salmon filet
2 tbsp soy sauce
1 tsp dried coriander leafs
Fresh coriander, a few sprigs
1/2 tsp dried ginger
Sea ​​salt

Instructions

Put the fish into a microwave dish and combine with the soy sauce, coriander, salt and ginger. Leave to marinate for 30 minutes. Place the dish in microwave oven and cook at high power (900W) for 4 minutes. To serve, sprinkle with chopped coriander.

Tip: Instead of microwaving bake the fish in a baking bag at 180C for about 15-20 minutes.

Shrimp with Vegetables

Description

Shrimp, zucchini, carrot and bean spouts with soy sauce and sesame seeds. 

Ingredients

2 servings
Shrimp 250-300 g (fresh or frozen)
1 zucchini
1 carrot
300 g bean sprouts
1 tsp sesame seeds
Soy sauce

Instructions

Cook the frozen shrimp according to the instructions on the package. Fry the sesame seeds until golden brown.
Cut the carrots and zucchini into thin strips. Heat a little olive oil in a wok (or in an ordinary frying pan). Put the carrots into the wok and fry for 1 minute. A minute later add the zucchini and shrimp (if you are using fresh shrimp); fry another 2-3 minutes. At the end of frying add the bean sprouts and fry for 1 minute.
Put the fried shrimp and vegetables onto a serving dish, drizzle with some soy sauce, sprinkle with sesame seeds and serve.

Tip:
You can add some fresh garlic at the end of frying.
