Baked Pork Fillet

Description

Tender and moist pork fillet, baked with garlic and herbs.

Ingredients

500 g pork fillet
2 garlic cloves
Flour
Thyme or rosemary, 4-5 sprigs
Olive oil
Salt
Ground black pepper

Instructions

Crush the garlic with garlic press. Rub the meat with salt, pepper, garlic and flour. In a frying pan preheat some olive oil. Quickly fry the fillet over high heat until golden brown. Put the meat into a baking bag, arrange herbs on the top. Bake at 200C for about 40 minutes.

Baked Poussin

Description

Oven baked poussin with potatoes and dry fruits.

Ingredients

1 poussin
4-5 potatoes
5-7 prunes
1-2 garlic cloves
Olive oil
Ground black pepper
Salt

Instructions

Crush the garlic with garlic press. Rub the poussin with garlic, salt and pepper. Stuff the bird with the prunes. Put it with the potatoes into a baking bag. Drizzle with some olive oil. Bake at 200C for about 1 hour.

Breaded Chicken Breasts

Description

Theese breaded fried chicken breasts are crunchy outside and very juicy inside. 

Ingredients

4 chicken breasts
75 g breadcrumbs
1 egg
2-3 tsp dried parsley
Ground black pepper
Salt
Olive oil

Instructions

Pound the chicken breasts. In a frying pan preheat 3-4 tablespoons olive oil. In a small bowl beat the egg. Mix the breadcrumbs, parsley, pepper (or your favorite seasoning) and salt. Dip the chicken breasts first in the beaten egg, then in the breadcrumbs mixture on both sides. Put them onto the frying pan and fry on each side until golden brown.

Chicken Breasts with Mushroom Sauce

Description

Crispy chicken breasts with quick and tasty mushroom sauce.

Ingredients

4 chicken breasts
1 clove garlic, chopped
400 g champignons
200 g double cream
Ground black pepper
Olive oil
White flour
Salt

Instructions

Pound the chicken breasts. Rub with garlic, salt, pepper and flour. In a frying pan, preheat some olive oil. Fry the meat until golden for about 5 minutes on each side.
Meanwhile cut the mushrooms thinly. Fry them in a little olive oil until they start to soften. Add the cream and simmer 2 minutes. Stir in 1/2 teaspoon flour, salt and pepper and simmer for another minute.

Chicken Thighs with Potatoes

Description

Tasty chicken with garlic and lemon, roasted with new potatoes.

Ingredients

6 chicken thighs, boned
9-10 medium size new potatoes
2 tbsp lemon juice
2 garlic cloves
Olive oil
A few springs of dill, finely chopped
Ground black pepper
Salt

Instructions

Crush the garlic with garlic press. Rub the chicken with salt, pepper and garlic and smear with olive oil (1 tablespoon of oil). Cut the potatoes into wedges. Put into a shallow baking dish, drizzle with the oil, add salt and mix well. Set a rack on top of the dish and arrange the chicken on the rack. Bake in a preheated to 220C oven for 30-40 minutes. Sprinkle the chopped dill over the potatoes before serving.

Fusilli with Stilton Sauce and Bacon

Description

Fusilli pasta with creamy Stilton sauce and fried bacon.

Ingredients

For 1 serving
100-120 g Fusilli
2,5 tbsp Stilton
120 ml milk
1/2 tbsp butter
1/2 tbsp flour
2 strips bacon
Basil leaves

Instructions

Cook the pasta according to the package instructions. Fry the bacon and cut it into small pieces.
In a small saucepan melt the butter. Gradually add the flour, stirring constantly until smooth. Pour the milk, heat and add the cheese. Cook, stirring constantly, until the cheese has melted and you have had a sauce. Add the bacon into the sauce. Mix the pasta with the sauce. To serve, sprinkle with chopped basil.

Pilau Rice (Plov) with Turkey

Description

One easy recipe of fragrant Pilau Rice (Plov). You can also use chicken instead of turkey.

Ingredients

For 4 servings
450 g turkey fillets
350 g carrots
150 g onions
2 garlic cloves
230 g basmati rice
100 ml olive oil

Spices
Whole cumin seeds 1 tbsp,
2 cardamom pods, pinch of saffron,
ground coriander, ground black pepper,
green and red bell peppers

Instructions

Cut the turkey into small cubes and sprinkle with some salt. Grate the carrots. Slice the onion into thin semicircles. Peel the garlic.
In a deep frying pan heat the olive oil. Add the onion and fry for 5 minutes until golden brown. Add the meat and fry over medium heat for 10 minutes. Add the carrots, fry another 5 minutes. Sprinkle with the spices and salt, mix and add the rice. Start to pour boiling water. The water should completely cover the mixture. Stick the garlic, cover with lid and simmer on a low heat for 15-20 minutes until the rice is cooked. The rice should absorb all the liquid.

Tip:
You can use the seasoning mix from this recipe.

Potato Casserole with Bacon and Cheese

Description

A warming dish with fried bacon and Swiss cheese.

Ingredients

(For 2 servings as a main course)
600-700 g potatoes
Smoked bacon, 6 strips
200 g grated cheese (Gruyere, Emental)
200 ml milk
Ground black pepper
Salt

Instructions

Peel the potatoes and cut into small cubes. Fry the bacon and cut into small pieces. Arrange the potatoes in two baking forms, sprinkle with salt, pepper and cheese (leaving a little cheese to sprinkle on top) and bacon. Mix, pour the milk and sprinkle with the remaining cheese. Cover with foil and bake at 250C for about 30 minutes. Remove the foil 5 minutes before the end of baking for forming a golden crust.

Shepherd's Pie

Description

A delicious one-pot dish made with lamb and vegetables.

Ingredients

For 6 servings
1.5 kg potatoes
150 ml milk
2 eggs
6 tbsp flour
40 g butter
600 g minced meat (lamb, beef or pork)
2 carrots
1 onion
1 garlic clove
200 g green beans
2 tomatoes
1 tbsp olive oil + extra for greasing
Ground black pepper
Salt

Instructions

Boil the potatoes. Make the mash, adding the milk and butter. Let to cool, then add the eggs and flour; mix thoroughly.
Cut the onions and beans into small pieces, slice the carrots, finely chop the garlic. Dice the tomatoes. Heat 1 tablespoon oil in a frying pan. Sauté garlic and onions until golden brown. Add the mince and fry for 3-4 minutes, stirring occasionally. Add the carrots, tomatoes, beans. Season with salt and pepper.
Grease a baking dish with oil. Put a half of the mashed potatoes and smooth. Top with the fried mince and vegetables. Spread the remaining mash on top. Cover with foil, place into preheated to 180C oven and bake for 50 minutes. Then remove the foil and bake another 7-10 minutes until golden brown.

Spicy Chicken Drumsticks

Description

Delicious chicken drumsticks in a mustard and honey marinade.

Ingredients 

8 chicken drumsticks
1 tbsp honey
1 tbsp olive oil
1 tbsp mustard
1 tbsp of seasoning mix (see below)

Instructions

Place all the ingredients into a bowl. Mix together well. Leave to marinate for 30 minutes at room temperature or overnight in the fridge.
Preheat oven to 200C. Put the chicken drumsticks into a baking bag. Bake 30-40 minutes until golden brown. You can also fry the chicken drumsticks on a frying pan for the same amount of time instead of baking.

The seasoning mix, which I used ("Jamaican Jerk Chicken") : Unrefined Sugar, Red and Green Bell Peppers, Dried Onion, Sea Salt, Yeast Extract (contains Barley), Dried Garlic, Allspice (4%), Bay Leaves, Coriander Leaf, Thyme (3%), Citric Acid, Dried Chillies (2%), Dried Lemon Peel, Roasted Coriander Seed (2%), Dried Honey, Black Pepper, Coriander Seed, Roasted Cumin, Vegetable Oil, Wheat Bran, Garlic Oil.  

Stir Fried Pork with Prunes

Description

Prunes make this simple dish special.
Serve with mushed potato.

 Ingredients

For 4 servings
450 g pork, cut into strips
1 onion
2 small carrots, sliced
6-8 prunes
Black pepper
1-2 bay leaf
Olive oil
Salt

Instructions 

Slice the onion. In a frying pan preheat some olive oil. Put the onion into the frying pan and fry for 1-2 minutes. Add the meat and fry for another 2-3 minutes. Add the carrots, bay leaf and black pepper. Cover with lid and bring to a boil. Then reduce the heat and simmer for 40-50 minutes until the meat becomes tender. Сut the prunes lengthwise, add to the meat and simmer for another 5 minutes. Salt at the end of cooking.  

Stuffed Aubergines

Description

Baked aubergines stuffed with minced pork, tomatoes and garlic.

Ingredients

2 aubergines
300 g minced pork
2-3 tomatoes
1 onion, finely chopped
1 crushed garlic clove
1/2 tbsp tomato purée
Olive oil
Ground black pepper
Salt

Instructions

Preheat oven to 200C. Cut the aubergines in half lengthwise. Scoop out the flesh and cut into small pieces. Rub the aubergines with olive oil and salt and place in the oven for 20 minutes. Meanwhile, peel one tomato and cut into small cubes. Heat 1 tablespoon olive oil in a frying pan. Fry the aubergine flesh for about 5 minutes until soft. Remove from the pan. Add the mince and fry for about 5-7 minutes. Add the garlic and onion and cook for 5 minutes. Add the pepper, tomato and tomato purée and cook another 5 minutes. Mix with fried aubergine flesh and salt. Remove the aubergines from the oven and fill with the mix. Finely slice the remaining tomatoes and put on the top of the stuffed aubergines. Put back in the oven for another 20-25 minutes.

Stuffed Bell Peppers

Description

An easy dish for a big party. Use multicolored peppers for more fun :)

Ingredients

5 large bell peppers
400 g minced pork
75 g rice
1 can chopped tomatoes (250 g)
Spices to taste
Salt
Sour cream

Instructions

Cut top off the peppers from the stem end and remove seeds. Boil the rice until half cooked, drain the water. Mix the minced meat with the rice, add spices, a little liquid from the tomatoes (2-3 tbsp) and salt. Stuff the peppers with the mixture. Pour some chopped tomatoes into a baking, add 125 ml of boiling water and mix. Put the peppers tops up. Cover the dish and place into preheated to 200C oven. Bake for 40-50 minutes. To serve, garnish with sour cream.

Tip: If you have leftover mixture of meat and rice, you can make meatballs. If some peppers are left, just cut them further into small pieces and put to the baking dish along with tomatoes.

Tagliatelle with Chicken and Sun-Dried Tomatoes

Description

Tagliatelle pasta with fried chicken breasts, sun-dried tomatoes and herbs.  

Ingredients

For 2 servings
5 Tagliatelle nests
2 chicken breasts
5-6 sun-dried tomatoes
Basil and parsley (several leaves)
Grated cheese (Parmesan)
Olive oil
Italian seasonings

Instructions

In a frying panpreheat a little olive oil. Cut the chicken breasts into thin strips, sprinkle with spices, salt and fry until golden brown. Cut the tomatoes into small pieces, add to the chicken and mix well. Cook the pasta, following the package instructions. Once cooked, drain the pasta, and toss with 1 tablespoon olive oil. Then put the tagliatelle on a serving plate and arrange the chicken with tomatoes atop. To serve, sprinkle with the grated cheese and herbs.

Turkey Mince Rissoles

Description

Simple, tasty and low fat :)

Ingredients

500 g turkey mince (from dark meat)
30 g breadcrumbs
Milk (cold or warm)
Salt
Spices to taste

Instructions

In a glass pour the breadcrumbs with milk (60 ml plus a little more). Left aside until the crumbs absorb the milk. In a bowl mix the mince, breadcrumbs, salt and spices. Divide the mixture into 5 equal portions and shape each into a rissole. Preheat a frying pan with some olive oil. Fry the rissoles for 3 minutes on each side or until browned. Cover and fry on a low heat for 15 minutes.

Сhicken Chops

Description

Chicken chops marinated in lemon juice.

 Ingredients

2 chicken breasts
2-3 tbsp lemon juices
Salt
Seasonings to taste

Instructions

Make chicken chops about 5 mm thick, sprinkle with the lemon juice, salt, season, mix and put into the fridge for half an hour.
Preheat a frying pan with a little olive oil and fry the chops for 5 minutes on each side or until browned.

Tip: You can sprinkle chicken chops with lemon juice just before frying.
