Basel Flour Soup (Mehlsuppe)

Description

Basel Flour Soup is a simple soup made from roasted flour, broth or water, onions, butter and cheese. This dish is associated with the Basel Carnival (Basler Fasnacht).

Ingredients

For 2 servings
500 ml light broth
80-100 ml white wine
25 g flour
25 g butter
1 medium onion
Cheese (eg, Emental)
Salt

Instructions

Fry the flour until brown. Finely chop the onion. Melt the butter; gradually pour the flour, stirring constantly. Add the onion and simmer for 5 minutes. Pour the broth and wine, bring to a boil and cook on a low heat for 30-35 minutes. Salt to taste. To serve, sprinkle with some grated cheese.

Fondue

Description

Swiss fondue - is a dish of melted cheese with the addition of wine, Kirsch, garlic and spices. Prepared in a special heat-resistant pot - caquelon. Served with ​​bread, cut into cubes. The bread is speared on a fondue fork and dipped into the cheese mixture. Fondue is usually served with the same wine, which was used in its preparation. 

Ingredients

(For 2 servings)
200 g Gruyère cheese
200 g Emmental cheese
200 ml dry white wine
1-2 garlic cloves
2 tbsp Kirsch
1 tsp flour
Ground black pepper
A pinch of ground nutmeg
White bread, cut into medium cubes

Instructions

Rub the caquelon with a cut garlic clove. Grate the cheese. Mix the flour with the wine. Put the cheese into the caquelon, pour the wine mixture. Crush the garlic with a garlic press, add to the cheese mixture. Bring the mixture to a boil, stirring constantly. Stir in the same direction in a figure 8 motion to prevent the cheese becomes stringy. When the cheese mixture becomes smooth add the Kirsch and spices. Serve with the white bread.

Tip: You need to buy bread for a day before cooking fondue. When the bread is not very fresh it does not slide off the fork into the hot cheese.

Raclette

Description

Raclette - a Swiss dish of melted cheese. Traditionally, herders in the Alps put the cheese close to the fire and scraped off the melted part. The modern way of serving is a special grill machine, which is placed on the table. As a garnish can be used boiled potatoes, pickled cucumbers and onions, as well as capers.

Ingredients

Raclette cheese (200 g per person)
Boiled small potatoes
Pickled cucumbers
Pickled onions
Olives
Capers
Ground black pepper

Instructions

Cut the cheese into 0,5mm thick slices. Heat the grill. Put the cheese on the raclette pan, sprinkle with the pepper and place onto the grill. When the cheese melts, pour it over the potatos on the plate. Serve with white wine.

Röschti

Description

Röschti - is a popular Swiss dish made ​​from grated potatoes with the addition of vegetable oil. It was originally a farmer's breakfast in the canton of Bern. Today it is served as a main dish or a side dish. 

 Ingredients

5 medium size potatoes
Vegetable oil (rapeseed or olive)
Butter
Salt
Ground black pepper (to taste)

Instructions

Boil the potatoes until almost ready. Grate on a coarse grater, season with salt and black pepper, add oil (2-3 tablespoons) and mix. In a frying pan preheat a little oil (1-2 tablespoons). Add the potato mix and and press it into a pancake. Fry for 5-6 minutes. Turn over to the other side and fry for another 5-6 minutes. To serve smear the top with some butter.
